Lunchbox scrolls

I have been eyeing these off in so many lunch box forums and instagram feeds that it was about time that I had a go at making them myself.

I used a 2 ingredient dough recipe (and it really was only 2 ingredients), some leftover bacon, grated cheese and tomato sauce as I had run out of tomato paste.


It took me 10-15 minutes to prepare and another 20 minutes to bake.


They were delicious and its been tough going keeping the kids from wolfing them all down in one sitting.


What I really love is - you can turn this 2 ingredient dough into anything that your food imagination will take you.


These ones are a lunchbox filler - not the main event... to make them the main event I would beef up the filling by adding a serving of protein and some veg - leftover cooked mince or chicken with some baby spinach and possibly some cheese such as fetta would be nice.


Next time I am going to have try at using gluten free flour and see how they turn out.

RECIPE

2 MINUTE DOUGH

  • 2 cups of wholemeal flour

  • 1 cup of plain greek yoghurt

In a bowl add 1 cup of flour and the yoghurt, mix until well combined, then gradually add in the remainder of flour. Knead for approximately 5 minutes and then roll out into a rectangle around .5cm thick.

SCROLLS

Spread your toppings of choice evenly over the base and then firmly roll up. Cut the roll into 2cm pieces and place out onto baking tray to bake. Cook in 180 degree celsius oven for 20 minutes until golden brown.
