Lauren Stark Naturopath Scrambled Tofu

SCRAMBLED TOFU

Gluten Free, Diary Free, Egg Free, Vegan

Ingredients

  • 1 tbs of olive oil

  • ¼ red capsicum diced

  • ½ red tomato diced (de-seeded)

  • ½ small bag of baby spinach

  • 2 x spring onions diced

  • 1 tsp cumin

  • 125g of firm organic tofu crumbled

  • 1 tsp turmeric

METHOD

In small fry pan heat olive oil, add capsicum, tomato and spring onion and sauté for 2-3 minutes until tender. Add crumbled tofu and spices, stir-fry for approximately 2 minutes until heated through.

Serve with greens.
