SCRAMBLED TOFU
Gluten Free, Diary Free, Egg Free, Vegan
Ingredients
1 tbs of olive oil
¼ red capsicum diced
½ red tomato diced (de-seeded)
½ small bag of baby spinach
2 x spring onions diced
1 tsp cumin
125g of firm organic tofu crumbled
1 tsp turmeric
METHOD
In small fry pan heat olive oil, add capsicum, tomato and spring onion and sauté for 2-3 minutes until tender. Add crumbled tofu and spices, stir-fry for approximately 2 minutes until heated through.
Serve with greens.
