Fresh mango Salsa
Are you totally mad for mango's like me??? I go a little crazy during summer and will add mango to just about anything - as snack, side, sweet or savoury - you can't stop me!
So relishing in my first ever online grocery order delivery I put this little number together. I hope you enjoy it as much as me.
1 mango (skin & seed removed) chopped/diced
3 x cherry tomatoes (diced)
1/4 red onion finely diced
1/2 red capsicum seeded and diced finely
Juice of 1/2 lime
** 1/2 cup of chopped fresh coriander or mint would really make this salsa bang!
Add all into a small bowl and gently toss with your hands, set aside to marinade in the juices whilst you prepare your protein.
I served tonights with a succulent fillet of salmon, some steamed potatoes and beans and handful of baby spinach. On the table in less than 30 minutes and family friendly.
